This is one of my new favourite breakfast recipes. It's super easy to prepare and you don't have to spend any time in the morning to prepare your breakfast. The banana naturally sweetens the oats but you can add some maple syrup or dates if you prefer.
Recipe (serves 1)
Prep time: 5 minutes
- 2/3 cup oats
- 1/2 mashed banana
- 1/2 half a passion fruit
- 2 tablespoons of coconut yogurt
- 2/3 cup coconut milk (not full fat)
- 1/2 tsp vanilla extract
Mix everything together in a bowl or jar and place into the fridge for at least 30 minutes or overnight. Top with your favourite toppings. Tip: mango would be super delicious!
